Grilled Feta Vegetable

Place 1 red pepper sliced, 1 small eggplant diced, 1 slice of zucchini and 1 cup of sliced mushrooms in a small pan. Sprinkle with salt, pepper, garlic powder, thyme, and basil then bake for 10-12 minutes. Spread Russian dressing on the baguette and pile on vegetables. Lastly, layer mozzarella cheese and feta cheese on each sandwich. Bake for 5-8 minutes, until cheese is melted.
